About Gabriella

Hello, my name is Gabriella Mezanava, a traditionally trained chef, writer, mother to 4, and science-lover using diet, lifestyle, and personal primal knowledge to overcome the odds of healing from chronic Lyme Disease.  While there may not be an one-stop cure for the damaging effects that untreated, neurological and autoimmune Lyme had in my body since a young age, I believe that through Christ all things are possible.  No illness, trial, or circumstance in life defines who one is, rather shapes them into all that they are meant to be.  Here at Beyond the Bite, you will find many Paleo, Ketogenic, and primarily Autoimmune Protocol Paleo recipes that I create, along with health articles, daily doses of encouragement, and personal experiences through my healing journey. Aside from a nutrient-dense animal based diet, I have maintained/regained a good deal of my strength and stability thanks to pelvic floor therapy, @fittestcore BAB (1 and now 2, woot! 🎉) & @getmomstrong programming.

So I made a coconut flour cake adapted from @elanaspantry and doctored up some @simplemills frosting for the perfect “under the sea” themed birthday cake 👌🏻

Carnivore Kids, Animal-based Chicken Nuggets👇🏼

• 3 large chicken breasts
• 1 big bag of pork rinds
• 3 eggs
• Sea salt 
• Garlic powder (opt)

1️⃣ Slice chicken into strips and season liberally.
2️⃣ Crush pork rinds into a powder and place in a bowl.
3️⃣ Whisk eggs in a separate bowl until smooth.
4️⃣ Dredge meat in eggs then pork rinds until fully coated.
5️⃣ Bake on a parchment lined sheet tray at 375 dg for 20 minutes. 

We serve ours with @primalkitchenfoods sugar free ketchup and mayo 😋
